Ingredients

• 2 tsp Wendi’s Good Things Market Green ChileOlive Oil

• 1 lb boneless chicken breast

• 1 tbsp garlic powder

• 2 tsp onion powder

• 1 ½ tsp paprika

• 1 ½ tsp dried dillweed

• ½ tsp cumin

• ½ tsp kosher salt

• ½ tsp cayenne pepper

• 1 medium red bell pepper

• 1 medium green pepper

• 1 can fire-roasted diced tomatoes in juices

• 1 can instant brown rice

• 1 c low sodium chicken stock

• ¾ c grated cheddar

Directions

1. Heat olive oil in a nonstick skillet over medium heat.

   

2. Take chicken and place between two pieces of parchment paper and hammer until thin.

   

3. Cut chicken into 1 inch chunks (video doesn’t show this)

4. Once meat is brown begin adding onion, garlic powder, onion powder, paprika dill, salt, cumin, and cayenne pepper to the pan. Saute, stirring often until chicken is brown on the outside.

   

5. Stir in bell peppers, black beans, tomatoes, rice and chicken stock.

   

6. Bring to a boil then cover and simmer on low hear for 5 minutes, or until chicken and rice are done.

7. Adjust seasonings to taste.

8. Top with sliced avocado, sour cream, pico de gallo and cilantro.
