If you have never had a sopapilla dripping in honey, you are missing out! As a teenager that was uprooted from the Midwest and dropped right in the middle of the authentic southwest, this did not look like a "normal" dessert to me!
I was soon converted though. These yummy treats are rolled out and cut into triangles and then deep fried until they puff up. When still hot, you roll back the puff and add a generous amount of honey for a perfect treat. Try dipping in a sugar and cinnamon mixture when still wet from the oil for another amazing version.

This packet of hominy is ready to be brought to life in a perfect pot of posole. Posole is a staple soup dish in the Southwest. This traditional dish is typically made during Mexican holidays or when the chill of winter sets in.

If you want to cook authentic southwestern food, you MUST keep some chile pequin on hand. Chile pequin is one of the hotest peppers out there! In fact, they are five to eight times hotter than jalapeños on the Scoville scale. This pepper is dried into a seasoning pack and can be added to any dish to pick up the heat just a little... or a lot. In fact, we like to keep it in a shaker right next to the salt and pepper.

When we opened Locavores (our farm to table fast casual restaurant in Alamosa, Co) in 2016, we wanted a roasted chicken recipe that made you really want to eat chicken. It took us a while, but we found it! To this day, our chicken dishes are one of the best selling meats we have.
You love this seasoning because it really gives some life to your chicken dishes. It makes it easy to get in a lot of healthy protein. Be sure to send us pics of your chicken dishes on Instagram! @wendiseger @wendisgoodthingsmarket
