I was looking for a delicious, easy-to-make, and healthy side dish that would be perfect for pairing with fall flavors. I found the solution with this recipe, Roasted Fingerling Potatoes Recipe. 2 pounds fingerling potatoes, halved lengthwise (about 6 cups)

1 -2 tbsp chopped garlic
What You Do

cut fingerlings lengthwise and soak in cold water overnight

toss fingerlings to boil until soften (but only somewhat)

prepare a cookie sheet with parchment paper

put fingerlings on parchment paper

cover with olive oil and remaining ingredients.

toss fingerlings so they are covered with all the ingredients.

put in over and cook until toasted brown on top 375 - 30 min
