Roasted Fingerling Potatoes

Roasted Fingerling Potatoes

2 minute read

I was looking for a delicious, easy-to-make, and healthy side dish that would be perfect for pairing with fall flavors. I found the solution with this recipe, Roasted Fingerling Potatoes Recipe. It offers just enough carbs to complement all of your other dishes and fill your belly when the weather gets colder! These potatoes are roasted in olive oil with garlic and rosemary, so they come out tender on the inside yet crispy outside.

The ingredients list couldn't be more straightforward - fingerlings, salt and pepper, olive oil, and garlic cloves. This is also one of those recipes where you can play around with different spices if you want! This is my favorite combination.

What You Need

  • 1 tablespoon chopped fresh rosemary

  • 2 tablespoons olive oil

  • 1 teaspoon kosher salt

  • 1 teaspoon black pepper

  • 2 pounds fingerling potatoes, halved lengthwise (about 6 cups)

  • Cooking spray

  • 1 -2 tbsp chopped garlic

What You Do

  1. cut fingerlings lengthwise and soak in cold water overnight

  2. toss fingerlings to boil until soften (but only somewhat)

  3. prepare a cookie sheet with parchment paper

  4. put fingerlings on parchment paper

  5. cover with olive oil and remaining ingredients.

  6. toss fingerlings so they are covered with all the ingredients.

  7. put in over and cook until toasted brown on top 375 - 30 min

I hope you enjoyed this roasted fingerling potatoes recipe! It's great comfort food that can be served with anything. Next time, try pairing them with some of these new fall market finds to make your family happy and satisfied.
