A little twist on the traditional basic cinnamon roll. This delicious roll has a luscious blueberry filling with a surprising lemon twist.
Ingredients

1 c buttermilk

¼ c granulated sugar

2 pkts active dry yeast
-
4 tbsp unsalted melted butter

1 lg egg
-
1 lg egg yolk
-
4 c all-purpose flour

1 tsp kosher salt
-
zest of lemon
-
¼ c granulated sugar

1 ½ c fresh or frozen blueberries
-
1 tbsp cornstarch
-
tbsp fresh lemon juice
-
2 tsp ground cinnamon
-
⅓ c light brown sugar
-
4 tbsp softened butter
-
zest of lemon
-
1 c powdered sugar

Directions
For the dough
Whisk buttermilk and sugar in a heat safe glass measuring cup.
Microwave for 10-15 seconds.
Sprinkle the yeast over the surface of the milk and allow to foam (5 minutes)
Pour mixture into stand mixer.
Add egg, egg yolk, and melted butter. Whisk to combine.
Stir in flour, salt, and lemon zest.
Mix with dough hook until thick, then with hand.
Lightly flour countertop and turn dough out from bowl. Knead until smooth.
Place dough into greased bowl.
Cover and allow to double in size.
For blueberry filling
Combine filling ingredients in small saucepan over medium heat.
Remove from heat and allow to completely cool.
Cinnamon layer
In small bowl combine softened butter, brown sugar, and cinnamon.
Mix will until smooth. set aside.
To assemble
Roll dough into a rectangle ¼ inch thick (approx 13x16 in)
Spread cinnamon-butter mixture evenly over surface of dough.
Spread blueberry filling over butter mixture.
Gently roll into a log. Pinch seam closed with your finger.
Cut 12 even pieces.
Place in buttered 9x13 baking dish.
Allow to rise for 20 minutes.
Preheat oven to 375.
After rising second time cook for 20-25 minutes until golden.
For the Glaze
While the rolls are baking whisk the lemon juice, zest, and powdered sugar until smooth and creamy. Add additional ingredients to taste.
Drizzle across cinnamon rolls generously.
