Chopped Garden Salad with Honey Mustard Dressing

Salad Ingredients:

  • 4 cups mixed greens (romaine, butter lettuce, and/or baby spinach)

  • 1 cup cherry tomatoes, halved

  • ½ cucumber, thinly sliced

  • 1 carrot, shaved or julienned

  • ¼ red onion, thinly sliced

  • ½ cup radishes, sliced

  • Optional: sliced avocado, hard-boiled egg, or shredded chicken for protein

  • Optional toppings: sunflower seeds, crumbled feta, or fresh herbs like dill or parsley


Honey Mustard Dressing:

  • 2 tbsp Dijon mustard

  • 2 tbsp honey

  • 1 tbsp apple cider vinegar (or lemon juice)

  • 3 tbsp olive oil

  • Salt & pepper to taste

Instructions:

  1. Whisk together all the dressing ingredients in a small bowl or shake in a jar until emulsified.

  2. Toss salad ingredients in a large bowl. Drizzle with dressing just before serving and gently toss again.
