Our farm is located in Southern Colorado right near the New Mexico border. In this area, we LOVE, LOVE, LOVE anything with a little kick to it. In addition, the guys in my family have been trying to eat more of a carnivore diet, so this hit the mark all around! One thing I like about it is that I can put it together early in the day and toss it in the oven and it's literally done in 15-20 minutes when everyone is ready to eat. Enjoy friends!
mix cream cheese, cheddar cheese, jalapenos and bacon together in a bowl.
remove extra fat from skirt steak and hammer flat.
season skirt steak with salt and pepper.
place half of the jalapeno mixture on each skirt steak and spread out.
roll the skirt steak up from the little side in.
tie each skirt steak with two pieces of twine and cut down the middle forming two pinwheels each.
Place pinwheels flat in a cooking dish.
Cook in the oven for 15-20 minutes.
Recipe Note
Begin checking the steak at about 12 minutes if you like your steak rare. In my video I didn't put the bacon in the mixture, I put in on the top. Feel free to experment. It's all good!
