When we first discussed opening our farm to table fast casual restaurant in Southern Colorado years ago, I was completely skeptical with the idea of carrying lamb OR with the idea of having a gyro on our menu. I thought it was a little too elevated for our small town. However, after working with an amazing chef to come up with the perfect recipe, this lamb ended up being a hit! It was a top seller on the menu. Now, years later I'm sharing this amazing (and easy recipe with you.
Ingredients

1/8 c honey

1/4c lemon juice

1/4c black balsamic vinegar

1/8 c fresh rosemary

½ c mint
-
1/8c dijon mustard

braised lamb seasoning packet
-
5 lb boneless lamb roast
Directions
Cover bottom of roasting pan with aluminum foil
Cover aluminum foil with parchment paper with extra paper on each side.
place lamb roast in pan
add all ingredients on top of the lamb roast
use the parchment paper and create a “tent” over the top of the roast
cook for 2 hours at 400 degrees.
